Strawberry Shortcake

Here is a recipe for classic strawberry shortcake:

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 pint fresh strawberries, hulled and sliced
  • 1/4 cup sugar
  • whipped cream or vanilla ice cream, for serving

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the butter using a pastry cutter or your fingertips until the mixture resembles coarse sand.
  4. Stir in the heavy cream until a soft dough forms.
  5. Drop the dough by the spoonful onto the prepared baking sheet.
  6. Bake for 12-15 minutes, or until the shortcakes are golden brown.
  7. In a small bowl, toss the sliced strawberries with the sugar. Let sit for 15 minutes.
  8. Split the shortcakes in half horizontally. Place the bottom half on a plate and top with a spoonful of sugared strawberries and a dollop of whipped cream or a scoop of vanilla ice cream. Cover with the top half of the shortcake.
  9. Repeat with the remaining shortcakes and serve.
