Here is a recipe for classic strawberry shortcake:
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, cold and cubed
- 1 cup heavy cream
- 1 pint fresh strawberries, hulled and sliced
- 1/4 cup sugar
- whipped cream or vanilla ice cream, for serving
Instructions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the butter using a pastry cutter or your fingertips until the mixture resembles coarse sand.
- Stir in the heavy cream until a soft dough forms.
- Drop the dough by the spoonful onto the prepared baking sheet.
- Bake for 12-15 minutes, or until the shortcakes are golden brown.
- In a small bowl, toss the sliced strawberries with the sugar. Let sit for 15 minutes.
- Split the shortcakes in half horizontally. Place the bottom half on a plate and top with a spoonful of sugared strawberries and a dollop of whipped cream or a scoop of vanilla ice cream. Cover with the top half of the shortcake.
- Repeat with the remaining shortcakes and serve.
