Mutton Handi Recipe

 

 Mutton handi is a spicy and flavourful Indian dish that is traditionally made with mutton (goat meat) and a variety of spices. Here is a recipe for mutton handi that serves 4-6 people:

Ingredients:

  • 1 kg mutton, cut into medium-sized pieces
  • 2 tablespoons ghee or oil
  • 2 bay leaves
  • 4 green cardamoms
  • 2 black cardamoms
  • 1 cinnamon stick
  • 2 large onions, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons yogurt
  • 1 cup water
  • Salt, to taste
  • Chopped fresh cilantro, for garnish

Instructions:

  1. Heat the ghee or oil in a large handi (clay pot) over medium heat. Add the bay leaves, green cardamoms, black cardamoms, and cinnamon stick and sauté for a few seconds until fragrant.
  2. Add the onions and sauté until they are golden brown. Add the ginger-garlic paste and sauté for another minute.
  3. Add the mutton pieces and sauté for 5-6 minutes until they are browned on all sides.
  4. Add the red chili powder and garam masala and sauté for another minute.
  5. Add the yogurt and sauté for a few minutes until the mutton is well coated with the spice mixture.
  6. Add the water and bring to a boil. Reduce the heat to low, cover the handi with a lid, and simmer for 45-60 minutes or until the mutton is tender.
  7. Add salt to taste and garnish with fresh cilantro before serving.
