Mutton handi is a spicy and flavourful Indian dish that is traditionally made with mutton (goat meat) and a variety of spices. Here is a recipe for mutton handi that serves 4-6 people:
Ingredients:
- 1 kg mutton, cut into medium-sized pieces
- 2 tablespoons ghee or oil
- 2 bay leaves
- 4 green cardamoms
- 2 black cardamoms
- 1 cinnamon stick
- 2 large onions, finely chopped
- 2 tablespoons ginger-garlic paste
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 2 tablespoons yogurt
- 1 cup water
- Salt, to taste
- Chopped fresh cilantro, for garnish
Instructions:
- Heat the ghee or oil in a large handi (clay pot) over medium heat. Add the bay leaves, green cardamoms, black cardamoms, and cinnamon stick and sauté for a few seconds until fragrant.
- Add the onions and sauté until they are golden brown. Add the ginger-garlic paste and sauté for another minute.
- Add the mutton pieces and sauté for 5-6 minutes until they are browned on all sides.
- Add the red chili powder and garam masala and sauté for another minute.
- Add the yogurt and sauté for a few minutes until the mutton is well coated with the spice mixture.
- Add the water and bring to a boil. Reduce the heat to low, cover the handi with a lid, and simmer for 45-60 minutes or until the mutton is tender.
- Add salt to taste and garnish with fresh cilantro before serving.
