Mutton Achari Recipe


Here is a recipe for mutton achari:

Ingredients:

  • 1 pound mutton, cut into small pieces
  • 1/2 cup yogurt
  • 2 tablespoons achari masala
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon coriander seeds
  • 4 cloves
  • 1 cinnamon stick
  • 4 cardamom pods
  • 2 bay leaves
  • 3 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green chilies, finely chopped
  • Salt, to taste
  • 1 cup water
  • Fresh cilantro, for serving

Instructions:

  1. In a large bowl, combine the mutton, yogurt, and achari masala. Marinate the mutton for at least 2 hours, or overnight in the refrigerator.
  2. In a small pan, toast the cumin, mustard, fennel, coriander, cloves, cinnamon, cardamom, and bay leaves over medium heat until fragrant, about 2 minutes. Grind the toasted spices in a spice grinder or with a mortar and pestle.
  3. Heat the oil in a large pan over medium heat. Add the onion, garlic, ginger, and green chilies and cook until the onion is translucent, about 5 minutes.
  4. Add the marinated mutton and cook until it is browned, about 5 minutes.
  5. Add the ground spices and salt and stir to combine. Add the water and bring to a boil. Reduce the heat to low and simmer until the mutton is tender, about 1 hour.
  6. Garnish with fresh cilantro and serve hot.
