Here is a recipe for mutton achari:
Ingredients:
- 1 pound mutton, cut into small pieces
- 1/2 cup yogurt
- 2 tablespoons achari masala
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon fennel seeds
- 1 teaspoon coriander seeds
- 4 cloves
- 1 cinnamon stick
- 4 cardamom pods
- 2 bay leaves
- 3 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 green chilies, finely chopped
- Salt, to taste
- 1 cup water
- Fresh cilantro, for serving
Instructions:
- In a large bowl, combine the mutton, yogurt, and achari masala. Marinate the mutton for at least 2 hours, or overnight in the refrigerator.
- In a small pan, toast the cumin, mustard, fennel, coriander, cloves, cinnamon, cardamom, and bay leaves over medium heat until fragrant, about 2 minutes. Grind the toasted spices in a spice grinder or with a mortar and pestle.
- Heat the oil in a large pan over medium heat. Add the onion, garlic, ginger, and green chilies and cook until the onion is translucent, about 5 minutes.
- Add the marinated mutton and cook until it is browned, about 5 minutes.
- Add the ground spices and salt and stir to combine. Add the water and bring to a boil. Reduce the heat to low and simmer until the mutton is tender, about 1 hour.
- Garnish with fresh cilantro and serve hot.
