Here is a recipe for a delicious chicken biryani:
Ingredients:
- 1 cup basmati rice
- 1 tablespoon vegetable oil
- 1 bay leaf
- 1 cinnamon stick
- 2 cardamom pods
- 1 onion, thinly sliced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garam masala
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- Salt to taste
- 1 cup water
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 2 tablespoons chopped fresh cilantro
Instructions:
- Rinse the rice in a fine-mesh sieve until the water runs clear. Bring a large pot of water to a boil, add the rice, and cook for 6-7 minutes, or until the rice is tender but still firm. Drain the rice and set it aside.
- In a large saucepan, heat the oil over medium heat. Add the bay leaf, cinnamon stick, and cardamom pods, and fry until fragrant, about 1 minute.
- Add the onion and fry until it is softened and starting to brown, about 5 minutes.
- Add the chicken, garam masala, cumin, turmeric, coriander, and salt. Fry, stirring constantly, until the chicken is no longer pink, about 5-7 minutes.
- Add the water, raisins, and drained rice to the saucepan. Stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the pan with a lid.
- Simmer the biryani for 20-25 minutes, or until the liquid has been absorbed and the rice is tender.
