Chicken Biryani Recipe

Here is a recipe for a delicious chicken biryani:

Ingredients:

  • 1 cup basmati rice
  • 1 tablespoon vegetable oil
  • 1 bay leaf
  • 1 cinnamon stick
  • 2 cardamom pods
  • 1 onion, thinly sliced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • Salt to taste
  • 1 cup water
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 2 tablespoons chopped fresh cilantro

Instructions:

  1. Rinse the rice in a fine-mesh sieve until the water runs clear. Bring a large pot of water to a boil, add the rice, and cook for 6-7 minutes, or until the rice is tender but still firm. Drain the rice and set it aside.
  2. In a large saucepan, heat the oil over medium heat. Add the bay leaf, cinnamon stick, and cardamom pods, and fry until fragrant, about 1 minute.
  3. Add the onion and fry until it is softened and starting to brown, about 5 minutes.
  4. Add the chicken, garam masala, cumin, turmeric, coriander, and salt. Fry, stirring constantly, until the chicken is no longer pink, about 5-7 minutes.
  5. Add the water, raisins, and drained rice to the saucepan. Stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the pan with a lid.
  6. Simmer the biryani for 20-25 minutes, or until the liquid has been absorbed and the rice is tender.
  7. Stir in the slivered almonds and cilantro. Serve the biryani hot. Enjoy!
